Meal Plan Monday December 12, 2011

Most of the blogs I visit have a theme. If not frugality, than keeping a well running home. Usually, both. They always encourage meal plans, and I have to admit, I toy with it from time to time, but I find it very difficult! For instance, in the spring/summer when we have our Community Supported Agriculture (CSA) shares, we often don’t know what kind of veggies we are getting until that day. How can I plan an entire months meals or even a couple of weeks when I don’t know what’s going to be in my fridge?

Well, I’m trying it again. This time, I’m starting out small though. One week at a time seems appropriate. And I’m going to share it with you so that you can help me stay accountable.

Monday: oatmeal/leftovers/ macaroni & cheese, broccoli, salad

Tuesday: peanut butter toast, grapes/Taco Bell/meatloaf, cheesy potatoes, salad

Wednesday: smoothies/leftovers/leftovers (I’ll also be making beef stock this day)

Thursday: oatmeal/leftovers/ribeye steaks, salad, rice pilaf

Friday: peanut butter toast, grapes/leftovers/pizza, salad

Saturday: buttermilk pancakes, leftovers, meat sauce & pasta

Sunday: French toast bake/leftovers/pork roast, rice, green beans, salad

What’s For Dinner? The 12/12/11 Edition

I started this post, but saved it for later because my wonderful two-year-old woke up from nap early. Well, my husband (in his loving way) sends me an email, “You need to add more detail.” Needless to say, I was completely confused! When I went to look at the post, it appears that my son, while playing with my computer, somehow managed to post this…blank. How, I have no idea. But, it is what it is. So, I’m adding ‘detail’ about what’s for dinner!

It’s meatless Monday again. And this time I decided to switch it up. No rice & beans! I know, you’re shocked. I was too. But, we move on. Tonight, it’s homemade macaroni & cheese (sans Velveeta) with broccoli and salad on the side. Oh, yeah. I plan on mixing my broccoli with my macaroni & cheese. I can’t say what others are going to do, but why not?

I used a recipe from my trusted Betty Crocker cookbook   It was pretty simple. Started out with a roux (that’s flour & butter, right? 🙂 ) and ended with two whole cups of cheese! It says sharp cheddar but I only have mild on hand. It probably would be way better with sharp. Or some other yummy, melty, gooey type of cheese. But, I’ll experiment some other time.

What’s For Dinner? The 12/11/11 Edition

Today’s dinner was inspired by a simple request. Hubs asked, “Can we have BBQ chicken?” hmmm, let me think about it. It’s quick, easy, and already in the freezer so I just have to reheat it. How could I say no!

Sad but true, this is almost exactly the same dinner we had on November 8th. Barbecue chicken and cheesy potatoes (also from the freezer) with green beans and a salad. Yumo! I added peanut butter, chocolate chip Amish friendship bread for desert and voila! A calorie laden dinner of deliciousness.

What’s For Dinner? The 12/10/11 Edition December 10, 2011

Do you remember the red sauce I made a while back? Well, today I decided it was what’s for dinner! A simple dinner of pasta, sauce, salad and garlic bread. I toyed with making this a meat sauce, but in all honesty, I don’t know that the richness of the meat would have complimented the sauce. So, I skipped it. But man, was it delicious!

I followed it up with some peanut butter friendship bread with chocolate chips. YUM. I made the recipe without the POM juice (because I didn’t have any) and without the standard sugar & cinnamon coating around the pan. I don’t get the cinnamon and peanut butter combo. I did leave the 1tsp. cinnamon in the recipe, but I would take that out next time. It overpowered the peanut butter. I also melted the peanut butter before I mixed it so that it was easier. I’m not 100% sure it helped, but I’d like to think it did.

Magic! December 9, 2011

Today was a magical day. We met a friend for caffeine and play time at the local mall. There is a play center where toddlers and other small children can go crazy and burn off wintertime energy before nap time. A germ corral, my friend recently called it. She’s not wrong.

But, it was one of those days that just didn’t go right. I made the oh so common mistake of thinking this morning was the morning I’d get up early to pack diaper bags and snacks so I didn’t do that last night. I also didn’t wake up early. I did leave on time, early actually, but that is odd. Then, during the 45 minute drive E started asking for french fries. And no matter what I offered (fruit, crackers, olives, peanut butter sandwich, water) nothing would suffice. It was OK though, I went through the drive-through and got him a hashbrown (it was too early for french fries) and I got the largest Diet Coke offered.

Then, when we got there, I left the soda on the top of my car.  No biggie. E had fun playing in the play room and C and I hung out with our ‘new friends’ as E calls them. All is well. We eat the lunch I packed on the way home, talk and sing (he’s so CUTE!) and then get home. But lo and behold, E doesn’t want to sleep. Well, I have a rule. You may not want to sleep, but you need to have some quiet time in your bedroom. We all need quiet time for our sanity.

While E was ‘being quiet,’ I was getting C ready to go down for her nap. She was unusually smiley and talkative so we had a good chat and then, all of a sudden, she laughed. It was magical. I know around three months babies become totally different, but still. It’s so wonderful to experience!

Overall and ordinary day turned extraordinary! From singing with E to laughing with C, the day can’t get much better, can it?

 

It’s The Small Things: Wireless Printing December 8, 2011

Ever since I had E two years ago, I’ve found it hard to get downstairs to our office. It’s just too far from the action! After C was born three months ago, my trips downstairs became strictly for laundry and our freezer. Thankfully we have a laptop that I’ve perched on top of our microwave. That way I can still check Facebook but I don’t have to worry about little hands Facebooking too!

It’s worked out great except for my coupon shopping. Because I don’t get downstairs often, I don’t print my coupons often. A lot of times, they are all gone by the time I get down there to print them. Bummer! So, I complained enough and Hubs finally found something that would convert my printer into a wireless printer.

Say, WHAT?

This has been the Best. Thing. Ever! Now I just have to remember to go downstairs and get my coupons! It may seem like a small thing, but I find it’s those small things that really make our lives easier.

 

What’s For Dinner? The 12/7/11 Edition

Last night was Hubs birthday. Normally I try to make it special by making a meal I know he’ll like and of course a desert! Yesterday, not so much. I ran out of time! It’s amazing how that happens. But, since his favorite meal is pizza, I had him pick up some Pizza Hut on the way home. At the table he asked, “We’re still having pizza on Friday too, right?” Right…

If I can get it together, I’m going to make some Reese’s Peanut Butter Cup cupcakes. I may just eat the PB cups, but we’ll see. I’ll let you know!
