The series is really making me think about our menu plan! It’s meatless Monday again, and again we had southwest style beans & rice. This time I used enchilada seasonings and tortillas instead of taco seasoning and chips, but still. It’s pretty much the same thing we have every Monday. And, although we have pizza every Friday, it’s not the same! So, I need some help with meatless Mondays. Here are some dishes we’ve done in the past:
Pasta & sauce (I made all that red sauce, why not?)
Beans, broccoli & pasta (Garbanzo beans sautéed with garlic & olive oil, add pasta and broccoli and some Italian seasonings. If it wasn’t meatless Monday, I’d add bacon 🙂 )
Macaroni & cheese
This list is pathetically small. Do you have any suggestions?
