What’s For Dinner? The 11/16/11 Edition November 16, 2011

I’m scrounging out of the freezer again tonight. I’ve been staying up way too late and it’s starting to show. Last night I went to bed ‘early’ at 1:30 a.m. Today I took a nap while the kids napped. It was the first time in 2 months. Oh well!

The Hubs loves this dish. Hot Beef (as he calls it) over buttered noodles with my personal favorite, green beans! I might add some corn too.

Hot Beef & Pasta

Seems a little light on vegetables without something else.  The beef is super easy and versatile which is probably why I like it so much. You simply take a roast of some kind (I use whatever is first in the freezer), cube it up and put it in a crockpot. I then add 1 can cream of mushroom Soup and 1 can french onion soup. If you are using a smaller roast, maybe 2-4lbs, use just a half of a can of each soup and save the rest for something else. Let it sit all day on low, and eventually the cubes will fall apart and be delicious! You can serve this in buns like my mother-in-law, or over rice, potatoes, or noodles as I tend to do. I mean shoot, I don’t even have to prepare a sauce!

This is a pretty rich dish and freezes great, so I package about 3C in a freezer bag and wait for a lazy day. Or, less productive day.

For desert, we are going to have Girl Scout Cookies! Oh, I can’t wait. Trefoils (or shortbread to some of you) with Nutella on top. Yum, Yum, YUM!

Today was a “what is in my freezer?” kind of dinner day.  It rained here all day and although I love the rain, my oldest little one loves to go outside and run off energy even more.  When he can’t do that, it makes for an interesting day. Today, was an interesting day.  Couple that with me staying up too late last night, and dinner becomes quick and easy.

Tonight I mixed broccoli with my leftover cheesy potatoes from last night.  We also had barbecue chicken sandwiches  that I pulled from the freezer.  I used this recipe for Crockpot Barbecue Chicken as inspiration. The main difference is that I made my own barbecue sauce! It’s really very easy:

1/2C. Ketchup

2tsp Yellow Mustard

1/8 tsp Chili Powder

1T Worchester Sauce

1/4C Brown Sugar

1/2-3/4C water

Boil in a saucepan, then pour over meat. For a thicker sauce, add a cornstarch & water mixture. Note: my mother-in-law mentioned to me that when she makes this she adds some store-bought sauce to it as well for flavor. I did not, and we liked it just fine 🙂

The Start

As I type the word applesauce, I can hear my little one saying it with a huge smile on his face! He does love his applesauce. I’ve been getting these great pre-packaged pouches of applesauce that he can enjoy by himself. No spoon, no bowl, no mess! I still get the jars too, but that is mainly for baking and jello.

I found a fun looking recipe for Crockpot Applesauce and I had some apples in the freezer from last year that needed attention, so voila! I experimented.  Instead of fresh apples (mine are yet to be processed) I used 9 cups of already frozen apples and skipped the water. After 4 hours, I added only 2 tablespoons of sugar, and some cinnamon, ginger, allspice, and cloves. I can’t give you measurements, because I just sprinkled it all in until it looked ‘just right.’

Well, the result was wonderful! Chunky, warm, delicious applesauce. My husband kept telling me it tasted like apple crumble filling. Experiment a success!
