What’s For Dinner? The 12/12/11 Edition December 12, 2011

I started this post, but saved it for later because my wonderful two-year-old woke up from nap early. Well, my husband (in his loving way) sends me an email, “You need to add more detail.” Needless to say, I was completely confused! When I went to look at the post, it appears that my son, while playing with my computer, somehow managed to post this…blank. How, I have no idea. But, it is what it is. So, I’m adding ‘detail’ about what’s for dinner!

It’s meatless Monday again. And this time I decided to switch it up. No rice & beans! I know, you’re shocked. I was too. But, we move on. Tonight, it’s homemade macaroni & cheese (sans Velveeta) with broccoli and salad on the side. Oh, yeah. I plan on mixing my broccoli with my macaroni & cheese. I can’t say what others are going to do, but why not?

I used a recipe from my trusted Betty Crocker cookbook   It was pretty simple. Started out with a roux (that’s flour & butter, right? 🙂 ) and ended with two whole cups of cheese! It says sharp cheddar but I only have mild on hand. It probably would be way better with sharp. Or some other yummy, melty, gooey type of cheese. But, I’ll experiment some other time.

What’s For Dinner? The 12/5/11 Edition December 5, 2011

The series is really making me think about our menu plan! It’s meatless Monday again, and again we had southwest style beans & rice. This time I used enchilada seasonings and tortillas instead of taco seasoning and chips, but still. It’s pretty much the same thing we have every Monday. And, although we have pizza every Friday, it’s not the same! So, I need some help with meatless Mondays. Here are some dishes we’ve done in the past:

Pasta & sauce (I made all that red sauce, why not?)

Beans, broccoli & pasta (Garbanzo beans sautéed with garlic & olive oil, add pasta and broccoli and some Italian seasonings. If it wasn’t meatless Monday, I’d add bacon 🙂 )

Macaroni & cheese

Vegetable lasagna


This list is pathetically small. Do you have any suggestions?

Dinners have been pretty boring over here. Not only a lot of repeats, but a lot of leftovers!

The other day, I was watching The Chew on ABC and Michael Symon made something that really caught my eye! He called it Bacon Noodle Surprise and I thought anything with bacon can’t be so bad!

The nice thing was that the ingredients I needed from the store just happened to be on sale! Cabbage for $0.39/lb and sour cream and pasta for $1 works for me!  I will say I didn’t use bacon because I was out, but I figured ham would be an acceptable substitute. I’d say it was! I used about 1/2C of ham and if I did anything differently it would be to use more ham. The recipe calls for 1/2 package of bacon and I’m pretty sure that’s more than 1/2C. Just sayin’…

It turns out this was a hit with everybody but Hubs. He’s not a huge fan of cabbage. He said he’d eat it if there wasn’t cabbage in there and I said what’s the point? But E (my two-year-old) and my mom who was visiting all thought it was delicious. Mark that one in the WIN category.

What’s For Dinner? The 11/30/11 Edition November 30, 2011

What’s for dinner has been kind of boring lately, hence the slowness of posts. Mainly, I’ve been trying to use leftovers up.  Tonight we had leftover beans & rice from Monday. E loves dipping chips in that! Yesterday, was hamburger browned and served over rice with leftover turkey gravy from Thanksgiving. I wasn’t sure how turkey gravy and hamburger would go together but it went surprisingly well. Nobody got sick, anyways.

Amish Friendship Bread: Update November 11, 2011

I’m not sure that I ever posted a proper update to my previous post about this little bit of awesomeness. I went on my baking marathon and switched up the varieties I had planned on trying.  Partly because of taste, partly because of available ingredients, and partly because of a whim and a fancy.

Traditional Amish Friendship Bread

I ended up making two batches of Pumpkin Spice flavored bread, Nutella cupcakes, the traditional cinnamon flavor, and double chocolate.  I got all of my inspiration from this great website, Friendship Bread Kitchen.

I did make some modifications though.
Pumpkin Spice Bread: I actually had butternut squash freshly roasted and pureed, so it’s technically Butternut Squash Spice bread.
Nutella Bread: I made these in to cupcakes, and instead of swirling in the Nutella, I put 1tsp in the middle of each cupcake and covered it with batter. YUM!
Traditional Flavor: This was made as-is. Can’t go wrong with the original!
Double Chocolate: This recipe was actually for chocolate peanut butter bread, but I didn’t have peanut butter chips. I used chocolate instead and I also didn’t have chocolate pudding so I used vanilla and added an extra tablespoon of cocoa powder. Tastes great!

I’ve frozen a lot of the bread. There is no way I could eat all that in 10 days! There’s no way I should eat that in 10 days! But, it is all delicious, and I’ve kept a starter out. Stay tuned!


What’s For Dinner? 11/9/11 Edition November 9, 2011

I’m still on a ‘what’s easy?’ kick. I’m not sure why.  It could be the weather changes, the fact that I’ve been going to bed too late, or some other random reason that I don’t know about  But that’s the way things go! Thank goodness I prepared a lot of freezer meals before the baby was born. I went through a huge cooking phase the past two months and barely used any of it, so now it’s time.

Tonight for dinner we’re having spaghetti with meat sauce and garlic rolls.  The sauce is a recipe from a church friend of mine, and is amazing! It is rich, hearty, and smokey! Not something I expected from a meat sauce the first time I tried it. The secret is bacon! I added some parmesean cheese rinds that I had in the freezer when I cooked it up for a little extra flavor (as if it needed it).

The rolls are a new favorite of our family. Bread Machine Butter Rolls are a recipe I got from Crystal at We’re in love and I’m pretty sure I make them once a week.  Maybe more. My only issue with the rolls is that I can’t seem to get them all uniform in size and shape. That’s a pretty serious offense! 🙂

I’ve been experimenting with add-ins to switch up my pitch-up a little bit. Tonight, I threw in 1T of garlic powder and some parsley. That might be a lot of garlic for some, but I really like garlic. Ask the hubs!

So it was a good, hearty, carb loaded meal tonight. What did you have for dinner?

I usually do meatless Mondays, but because of the mix-up from last night, we had meatless Sunday and today are having steak. Just about everything has already been done! The potatoes were finished last night, the steak started marinating earlier, and the green beans just go in the microwave so I decided to make some delicious butterhorns.  I skipped the chocolate so they are more like Pillsbury Crescent rolls than anything. YUM!

For desert we’re going to finish off some of the Amish Friendship Bread I made from my mad baking session. Most of it froze, but some stuck around for ‘quality testing.’
