What’s For Dinner? The 12/12/11 Edition December 12, 2011

I started this post, but saved it for later because my wonderful two-year-old woke up from nap early. Well, my husband (in his loving way) sends me an email, “You need to add more detail.” Needless to say, I was completely confused! When I went to look at the post, it appears that my son, while playing with my computer, somehow managed to post this…blank. How, I have no idea. But, it is what it is. So, I’m adding ‘detail’ about what’s for dinner!

It’s meatless Monday again. And this time I decided to switch it up. No rice & beans! I know, you’re shocked. I was too. But, we move on. Tonight, it’s homemade macaroni & cheese (sans Velveeta) with broccoli and salad on the side. Oh, yeah. I plan on mixing my broccoli with my macaroni & cheese. I can’t say what others are going to do, but why not?

I used a recipe from my trusted Betty Crocker cookbook   It was pretty simple. Started out with a roux (that’s flour & butter, right? 🙂 ) and ended with two whole cups of cheese! It says sharp cheddar but I only have mild on hand. It probably would be way better with sharp. Or some other yummy, melty, gooey type of cheese. But, I’ll experiment some other time.

The series is really making me think about our menu plan! It’s meatless Monday again, and again we had southwest style beans & rice. This time I used enchilada seasonings and tortillas instead of taco seasoning and chips, but still. It’s pretty much the same thing we have every Monday. And, although we have pizza every Friday, it’s not the same! So, I need some help with meatless Mondays. Here are some dishes we’ve done in the past:

Pasta & sauce (I made all that red sauce, why not?)

Beans, broccoli & pasta (Garbanzo beans sautéed with garlic & olive oil, add pasta and broccoli and some Italian seasonings. If it wasn’t meatless Monday, I’d add bacon 🙂 )

Macaroni & cheese

Vegetable lasagna


This list is pathetically small. Do you have any suggestions?


What’s For Dinner? The 11/14/11 Edition November 15, 2011

It’s Meatless Monday! We usually have some version of rice & beans on Mondays. The hubs is more of a meat & potatoes kind of guy so this has been a big change for him. Actually, eating with me in general has been a big change for him! Have I mentioned that when we first married, he didn’t eat vegetables? Not. One.  Not even the tiniest pieces of mushrooms from a can of Cream of Mushroom soup. Ridiculous! So, I set out to show him veggies weren’t so bad. Nine years later, he enjoys salads and is slow to start picking apart the veggies from his foods.

That being said, he is still sad if more than 2 dinners are meatless in a week.

Meatless Mondays also tend to have a Mexican theme. We love our Mexican food! Mexican food and Mexican tequila. Margaritas in fact. But, I digress. Back to dinner.

Meatless Monday

It’s pretty basic and almost always thrown together last-minute. I combined 1 can of Ranch Style beans with 3C cooked rice. I also added corn & peas from the freezer as well as 1/2 can of diced tomatoes for color & veggie content. Finally, there is homemade Taco Seasoning & salt. I used the recipe for the seasoning from here.  Don’t forget when you cook with this seasoning, that there is no salt in it unlike the pre-packaged stuff. The first time I used it I couldn’t figure out why it was so under seasoned. That’s why!

For dessert we are still working on some of the Amish Friendship Bread from my recent baking storm. I’ve got another one of those coming up in 2 days.
